Ingredients
- Chocolate of your choice – 8 oz (225g), chopped
- Dutch-processed cocoa powder – 3/4 cup total (divided: 1/4 cup + 1/2 cup)
- Espresso powder – 1 Tbsp
- Unsalted butter – 1 1/4 cups (melted)
- Granulated sugar – 2 cups
- Dark brown sugar – 1/2 cup
- Vanilla extract – 2 tsp
- Kosher salt – 2 tsp
- Large eggs – 6
- All-purpose flour – 1 cup
- (Optional) Flaky sea salt – for topping
Procedure
Step 1: Prepare Pan
- Preheat oven to 350°F (175°C).
- Grease baking pan with butter and line with parchment paper.
- Grease parchment with butter as well.
Step 2: Make Chocolate Base
- In a bowl, combine chopped chocolate, 1/4 cup cocoa powder, and melted butter.
- Mix until smooth.
Step 3: Make Sugar-Egg Mixture
- In another bowl, whisk granulated sugar, brown sugar, salt, and vanilla.
- Crack eggs into a separate bowl, then add to sugar mixture.
- Beat until light and airy (incorporating air for texture).
Step 4: Combine Mixtures
- Pour chocolate mixture into sugar-egg mixture.
- Stir until well combined.
Step 5: Add Dry Ingredients
- Sift flour and remaining 1/2 cup cocoa powder over batter.
- Gently fold into mixture until just combined.
Step 6: Bake in Two Stages
- Bake at 350°F for 20 minutes.
- Remove from oven and bang pan firmly on a hard surface to release air bubbles.
- Return to oven and bake an additional 25 minutes, until edges are set but center is slightly soft.
Step 7: Finish & Serve
- Sprinkle with flaky sea salt (optional).
- Let brownies cool completely before slicing.
Notes
- Banging the pan midway helps create the signature crackly top.
- For extra fudginess, slightly underbake and allow to finish setting as they cool.
- Store covered at room temperature up to 3 days, or refrigerate up to 1 week.
